Hi Andrea! Do you have a favorite Nam Prik sauce? I was thinking of marinating thin slices of cucumbers and carrots in Nam Prik for a flavored summery accompaniment to my BBQ grilled pork ribs. I don't care for normal pickling spices but thought this might work out well.
Thank you so much for doing the hard work. I've never thought of pan-fried rice noodles as a possibility at home. Have you ever had a recipe for noodle salad using wide flat rice noodles? It's too hot to think about noodle soup or pan-friend noodles at the moment, but I haven't found a sauce/dressing robust enough for linguine-style rice noodle.
