I use powdered coconut milk. It keeps forever (sort of) and I can easily control the taste and thickness of the reconstituted milk.

I’ve looked at mini choppers for awhile now and just couldn’t decide which one to buy. My kitchen is very small and is short on storage space. But if the Ninja handled the krogeun seasoning paste, I’m sold. Now I can organize a trip to the Asian grocery store for lemon grass to make this paste!

I just used my KitchenAide mini processor today to whirl up pitted kalamatas and the texture wasn't as fine as the NEC would have produced. So... my vote is for the Ninja.

I made the kroeung paste yesterday for use in the meat skewers recipe. I have a Kenwood multifunction chopper that has a variety of attachments including an immersion blender, mini-chopper, whisk, and beater. It handled the lemongrass and galangal pretty well, but just preparing those for the chopper got me out of breath! I realized I need to process the paste a little more after I already added the turmeric! Didn't read your instructions ahead of time. There is a faint yellowish color after rinsing! I'll stick it in the sun if it persists! I put the beef skewers into banh mi for dinner, and it was great! I had some sirloin in the freezer that was perfect for that dish! It did need additional salt, however, so I'll keep that in mind next time.

Hoooooray for kroeung power! It's a bit of a workout to chop things up. BUT if you have a strong machine, you can chop or slice a little bigger next time and then use the machine to whirl it up smaller.

Now, I'm going to look up that Kenwood machine.

I'm so happy you had kroeung beef skewer success!
