Your mom looks lovely and I will certainly be looking up her recipe! It’s interesting to see how many people cook for only 1 or 2 people. We’re a family of 4 living together (my husband plus 2 now adult children), but we rarely ever eat together because of our work and activities. In fact, this is the first Thanksgiving that both kids will be working (thankful that TJ is closed today). Sometimes when I cook there are no leftovers, and sometimes I end up eating them myself for far too many days.
Do you miss eating together? I wonder that because my siblings and their families have the same situation. I grew up eating promptly at 5:30pm with all seven of us present. Things have changed a lot in America.
I was raised by a single working mother who also had an active social life. Dinner and often holidays was just the two of us. Or just me. When our kids were young, my husband and I worked opposite shifts so we didn’t have to rely on daycare. Then we started working more similar shifts but then the competitive sports & activities happened… Perhaps those reasons are why I love to cook for my family when I can.

I made the creamy nuoc cham dressing to put on roast asparagus as part of our feast today. I put in two jalapeños, so it’s nicely spicy….it’s on heavy rotation here as a salad dressing too.
