I have never cooked beans with kombu before - but I will remedy that the next time.

I hardly ever soak beans the old-fashioned way, since I cook them in my Instant Pot but I wonder if you'll get all the kombu goodness with the much faster cooking times of the IP.

Only one way to find out. Thanks again for an interesting tip.

Put kombu in the IP. It's not a problem. I've done it many times. The bean cooking liquor is tastier from the kombu too!

Thank you for sharing your tales of tasty travels with us. If I could choose only one of your stops to visit it would most definitely be the Southeast Asian Market in FDR park. Some of the tastiest things I’ve ever eaten are Lao sausage and jerky, and I’m not even a big meat eater.

I’m ready to make another batch of my ginger cubes today (my daughter has been adding them to her smoothies). I think I’ll make your Ginger Scallion Carrot noodles as well and maybe add some edamame.

And since this is PTFS… Yesterday a coworker came up to me and said, “When I have questions about fish sauce, I know I can come to you.” I also told multiple people about using Red Boat in a batch of homemade roasted tomato soup.

Ginger cubes -- yes! It's such a good tip for preserving it. Love that you're the resident fish sauce ambassador at work. A drizzle in tomato soup is right on for umami goodness.

So happy you enjoyed your time in Philly-- and you hit all of the right spots indeed! Very happy you visited the SE Asian market, it is SO AMAZING! I'm sad to have missed you-- my restaurant was doing its own Cookbooks & Convos event that evening. But I'm so glad you were a part of this and got to bop around this awesome city!

Sara -- I'm sorry we didn't get to meet in person. I hung out with Ellen everyday because we stayed at the Franklin. Philly was so friendly and we hope to return sooner than later. I just need more excuses to! Hope your Cookbook and Convos event went well! I reconnected with Holly at SFA and she mentioned how the C&C name was her suggestion. So many Philly connections.

Loved hearing about the Philly restaurants. We've been to Reading Market several times but the Cambodian market sounds wonderful, not to mention the Vietnamese restaurants. Great fun to read the Southern Foodways update (still thinking of those crabs and City Grocery's shrimp and grits are famous for a reason). Had to laugh at the Chris and Susan photo. Terrific to spend time with you and with Rory. SFA is a gift!
