I’ve been doling out viet chile sauce to anyone who comes near - it’s completely addictive and utterly versatile. I spread it on everything (makes a miracle of a humble bacon cob) and adds a ‘something’ to stir fries, roasted vegetables and... well to say I was chomping through yoghurt and muesli this morning, dull as ditchwater and wondered....

I have an extremely robust collection of glass jars ready to repurpose, to reduce waste and also so I’m always prepared for gifting. I haven’t thought of saving plastic honey containers but it makes sense for chile sauce!

Andrea, THANK YOU!!! I have been trying with limited success for literally 42 years to make candied orange peels. So many recipes say to remove the white pith, which makes no sense. You gave me the courage to try again. I followed your recipe carefully and they are perfect. Using the chicken frying pan is a genius idea. Maybe I will share some for gifts or maybe I will eat them all! Thank you again.
